2-Ingredient Oats Pancake

Fibre is the word that comes to mind when I think of this recipe. Fibre and deliciousness, actually. It's got two base ingredients that are top tier on the nutritional profile side of things: protein-packed egg and fibre-fuelled oats. A dream duo, if you ask me.
Without boring you with too much sentimental babble, I made the first iteration of this recipe when I was 11. It's crazy for me to think it has now been made (and loved) by thousands of beautiful people whether they've been clients I've worked with, attendees of my workshops, or even readers of various recipe e-books and publications this little pancake has featured in.
I'm sure you're now wondering what all the fuss is about. So please, go ahead, make this recipe now. Right now! Breakfast, lunch, dinner, snack, dessert. I truely don't mind. It's a goodie on all occasions. Let me know how you find it.


Serves 1 | Preparation time: 5 mins
Ingredients
½ cup rolled oats
1 large egg
Optional Extras: 1-2 tsp of chia seeds, cashews, goji berries, almonds, flax seeds, walnuts or cacao nibs.
Method
Combine oats and egg in a bowl using a fork to form the pancake base mix
Oil a medium-sized pan (coconut oil is great) and bring to medium heat
Add pancake mix to the pan and use the back of your fork to flatten into a pancake shape
Lightly pan-fry on each side for 1-2 minutes, or until golden
Remove the pancake to serve and top as desired!
Recommended toppings: 100% nut butter of choice (I love Mayvers smooth peanut butter) with sliced banana or melted berries (melted berries also make a great "syrup" swaption!). Drizzling with honey and cinnamon is delicious too!
Just for good measure, thought I'd share one of the earliest pics I have of me and my love affair with this particular pancake. It was a Sunday morning in 2015 (which should be obvious, given the general peacing and pouting). For anyone skeptical on whether kids will actually like this recipe – see Exhibit A below to my left. That is my little sister (forever ratbag/favourite human). She was 8 years old in this photo. It was a Sunday morning, and she specifically asked for her favourite brekkie: "Lani's Oat Pancake". The rest of the days her diet consisted of very few vegetables and mostly melted chocolate. So the fact she liked this was enough proof I ever needed that it must be alright. I've been recommending it to people ever since.
